Gyeran mari (계란말이) literally translated to egg roll, is Korean-style rolled omelette. It’s usually served as a side dish for any meal, not just breakfast, and hugely popular as a lunch box item. This recipe is made with chopped carrots, onion, and scallion. It is wonderfully soft, fluffy, and delicious.
📌Ingredient needed
● 1 carrot
● 1 onion
● desired amount of scallion
● 6 eggs
● small portion of broth
● 1 teaspoon salt
● half teaspoon sugar
● cooking oil
● toasted seaweed
📌Steps
1. Dice carrot, onion and set aside.
2. Cut scallion and set aside.
3. Crack all 6 eggs into a big bowl and whisk evenly.
4. Add in broth, salt, sugar and whisk evenly again to blend.
5. Add in diced carrot, onion and scallion.
6. Preheat the pan and add in tiny amount of oil.
7. Add in the egg mixture in thin layer, once the egg harden, roll the egg to 4/5, push the rolled egg forward, and add in thin layer of egg mixture again.
8. Add in toasted seaweed in the middle layer and repeat to roll for another 2 layers..
9. Slice the egg roll and you are done.
